Easy like Sunday Morning? Really Lionel Ritchie? Who the fuck do you think you're kidding? When you own small people there is nothing easy about Sunday, or any morning in my experience. Below waist level there's generally a lot of noise and movement, joy squeals and pain squeals, random shouted half-sentences that could just as easily come from the mouth of a drunken yoda rather than two year old. Above waist level husband I deftly step over the array of pointy toys the small people seem intent on booby trapping the floor with, dodge fast moving crotch level limbs and valiantly attempt several snippets of conversation that we may finish when the kids leave home. Easy? No, this joint is a fucking three ring circus! But I kinda like the crazy.

Of course amidst the chaos the small people must be fed. There are approximately 87 articles of child appropriate drinking vessels, plates and bowls in this house and you can rest assured that I'll select the WRONG one every time. And of course if I'm not qualified to select the correct plastic bowl I don't have a shit show of knowing what's meant to go in it on any given day. Just because it's been yoghurt every morning for the past 98 days doesn't mean the same will follow today, don't get cocky Mum.

But despite the fickle flights of culinary fancy that are a child's wont, I can usually win favour with a batch of these pancakes made in miniature for little hands (yes hands, because the whole cutlery battle is a bridge too far at breakfast time!). Small food critics are the harshest - two year olds have no tact and babies no table manners. If I serve up sub-standard fare the big one will inform me unapologetically it's "'GUSTING," while the small one will simply spray it back at me through loud, wet raspberries so I'm pleased to report these have been thoroughly kid-tested and approved with empty plates as testimony of their success. They're super simple to throw together and have proven pretty fail safe producing light, fluffy pancakes every time - even during the morning frenzy!

Get this stuff

2 XL eggs

3 Tbl almond flour

1 Tbl coconut flour

1 Tbl tapioca (arrowroot)

2 Tbl almond milk (or your preferred milk)

1 Tbl macadamia oil (or very lightly flavoured olive oil)

1/2 tsp baking powder

1/2 tsp vanilla

optional 2 tsp sweetener of your choice - stevia, rice malt syrup, maple syrup or honey

Do this with it

Throw all the ingredients in a blender and blitz until you have a smooth batter. Of course if you don't have a blender you can mix it all by hand but, pffft, admin. Coconut flour is a super absorbent sucker so leave the batter to sit for at least 10 minutes and it will thicken up a little as it does. I usually mix it up night before and chuck it in the fridge ready for the next morning to save time.

Making the mixture is the easy bit, the real art is in the cooking. As you may already know, I'm not a patient woman, fast and furious is my usual modus operandi but I've learned the hard way that balls to the wall does not a good pancake make, and although it goes against my nature, a little bit of delicacy and moderation win the day with these.

Heat a pan to a medium heat and splash in a little oil or butter to grease then reduce the heat to just under halfway. Dollop spoonfuls of the mixture into the pan and wait. Wait. No not yet, just wait. When you see tiny bubbles rise to the surface and pop, then the pancakes are ready to flip and you should find them a light golden brown rather than a charred arse mess.  

Most of the cooking is done on the first side so they'll only need about half the time on the second side just to get that gorgeous brown going on.

These are delicious hot and fresh straight out of the pan but cold leftovers also make a great wholesome snack later, just be aware that with the almond flour they probably won't be suitable for school or daycare lunch boxes due to nut free policies so just save 'em for after school instead.

Makes about 10-12 kiddie sized pancakes, double or triple as desired for bigger batches or to make sure you have extras for 'ron.
