Spirulina & Sesame Superballs

I like these green goodies pre-workout, the colour and quite intense nuttiness of them makes them feel super clean and healthful, which would make sense because they are. Spirulina is awesome shit, it might look like pond slime and that’s kind of what it is, but it packs a mean nutritional punch. It’s made up of around 65% protein, contains all the essential amino acids and is high in natural iron along with a whole host of multi-vitamins and minerals so a little goes a long way. Also it’s green which I’m pretty sure must give you Incredible Hulk-like powers from consuming it so go ahead, eat up and see if you don’t feel like a badass mutant superhero.

Get this stuff

½ C dates, soaked and drained

reserve the soaking liquid which will be a date syrup that you can use to adjust the consistency if required or use in smoothies, chia puddings, breakfast bowls…

2T spirulina powder

½ C shredded coconut

2T tahini

I prefer hulled for this recipe as it has a more mild flavour but if you like a more intense sesame hit then feel free to use unhulled which is a lot bolder

¼ C walnuts

¼ C cashews

¼ C sesame seeds

¼ C raisins

1 T coconut oil if needed to adjust consistency

Options for coating: sesame seeds, chia seeds, crushed nuts

Do this with it

Blitz all of the ingredients except the sesame seeds, raisins and coconut oil until you have a thick, quite sticky dough.

If the mixture is too dry and isn’t sticking together add a little coconut oil or some of the reserved soaking liquid from the dates.

Finally add the sesame seeds and raisins; you want to keep these bits kind of chunky for texture and flavour so just process lightly just to mix through.

Roll into balls, smother in your choice of coating if that’s what you want to do and store in the fridge or freezer.

Makes around 40 teaspoon sized balls
